Spinach Clementine Salad

Ingredients

Dressing:

  • 3 T. olive oil
  • 1 T. pure apple cider vinegar
  • 2 t. honey
  • Salt to taste
  • Ground black pepper to taste
  • 1/2 small garlic clove, crushed

Salad

·         1 bag of baby spinach

·         5 c. Clementine or Mandarin Oranges, segmented

·         ½ small red onion, sliced thinly

·         ¼ c. unsalted toasted almonds, coarsely chopped

·         2 T. crumbled soft goat cheese, or to taste


Instructions

  1. Prepare dressing in a jar with a sealable lid.  Add all dressing ingredients, seal with the lid, and shake vigorously to combine.  Set aside.
  2. Place spinach in a large bowl.  Top spinach with oranges, onion, and almonds, toss well.  Drizzle with dressing and toss well.  Top with goat cheese.
  3. Make 4 servings.
