 Taco Casserole

Ingredients:

• 2 lbs ground beef

• 2 red peppers, chopped

• 1 chopped onion

• 6 tsp taco seasoning

• 2 tsp oregano

• 4 cups salsa

• 6 cups shredded cheese

• 2 cans of black beans, drained and rinsed

• 18 corn tortillas

Instructions:

1. Cook the beef, then add the pepper and onion, taco seasoning, oregano, salsa, and beans.

2. Add a scant amount of meat mixture to the bottom of a greased 9” x 13” pan. Tear tortillas into 4-6 pieces and spread generously on the meat mixture. Add 1/3 of the cheese. Add more torn tortillas. Add more meat mixture, then add 1/3 cheese. Add more torn tortillas. Top with the remaining meat mixture.

3. Bake 30-45 minutes at 350 degrees,
