Peanut Coleslaw
Ingredients:
• 2 cups cabbage, shredded
• 1 1⁄2 cups red cabbage,
shredded
• 1 large carrot, shredded
• 1 cup celery, finely sliced
• 1⁄2 cup green onions, finely chopped
chopped
• 1 cup dry-roasted peanuts
• 1/8 tsp garlic pepper
Dressing:
• 1⁄2 cup red wine vinegar
• 1/3 cup canola oil
• 1 tbsp water
• 1⁄4 tsp garlic powder
• 1 1⁄2 tbsp sugar
• 1⁄4 tsp seasoning salt
Instructions:
1. Combine cabbage, red cabbage, carrot,
celery, and green onions in a large bowl.
2. Mix the dressing ingredients together. Whisk until
emulsified.
3. Add the other ingredients, including the peanuts
and garlic pepper. Toss well to combine.
Note: For a special presentation, serve in a red cabbage leaf.
