 Hummingbird Cake

Ingredients (Mix by hand):

• 3 cups flour

• 1 tsp baking soda

• 1 tsp salt

• 1 tsp cinnamon

• 2 cups sugar

• 1 1⁄2 cups vegetable oil

• 3 eggs

• 1 8-oz can crushed pineapple

Then add:

• 2 medium or 3 small bananas, chopped, not mashed

• 1 cup chopped nuts – pecan or walnuts.

Instructions:

1. Pour into a greased tube or bundt pan that has been floured.

2. Bake at 350 degrees for 1 hour, 5 minutes. Cool in the pan for 1 hour. Enjoy.
