CLAM CHOWDER PERFECTION
Ingredients:
- 2 - 7½ oz. cans of minced clams
- ¼ cup butter or margarine
- 1 large onion, chopped
- ¼ cup flour
- 5 medium potatoes, peeled and diced
- 1½ cups milk
- 2 slices diced bacon
- Salt and pepper to taste
Instructions:
- Drain the clams and reserve the liquid.
- Cook bacon in a soup pot. Add potatoes and onion, and cover with the clam liquid and water.
- Cover and simmer until the potatoes are just tender.
- Meanwhile, make a thick white sauce with the butter, flour, and milk, and add the clams.
- Add this mixture to the potato mixture and thin to the desired consistency with water.
- Season with salt and pepper.
- Heat, stirring just to a boiling point (but DO NOT boil) before serving.
