 Spinach Stuffed Turkey Meatloaf

Ingredients:

• 1 c coarsely chopped mushrooms

• 1⁄4 c chopped onion

• 1 10-oz pkg frozen chopped spinach, thawed & drained or 2 handfuls fresh

• 1⁄2 c shredded mozzarella cheese

• 1⁄4 c grated parmesan cheese

• 1 lb ground turkey

• 3⁄4 c oatmeal (quick or old-fashioned)

• 1⁄2 c milk

• 1 egg white, lightly beaten

• 1 tsp dried Italian seasoning

• 1⁄2 tsp salt

• 1⁄4 tsp pepper

Instructions:

1. Preheat oven to 375 degrees. Spray a medium skillet with cooking spray.

2. Cook mushrooms and onion over medium-low heat for 4 minutes until tender. Remove from heat. Add spinach, 1⁄4 c mozzarella, and parmesan cheese. Mix well and set aside.

3. Combine turkey, oats, milk, egg white, and seasonings in a large bowl.

4. Spoon of 2/3 turkey mixture lengthwise down center of 11’ x 7” glass baking dish. Form a deep indentation down the middle, then fill with spinach mixture. Top with remaining turkey, forming a loaf. Seal edges to completely enclose spinach filling.

5. Bake 30-35 minutes until thermometer registers 170 degrees and juices show no pink. Remove from oven, sprinkle with remaining mozzarella. Return to the oven for 2 minutes until the cheese melts. Let stand 5 minutes before slicing.
