 Speedy Bean Soup with Smoked Sausage

Ingredients:

  • 3 tbsp olive oil
  • 1 medium diced onion
  • 2 medium diced carrots
  • 1⁄2 diced green bell pepper
  • 2 cloves minced garlic
  • 9 oz smoked beef sausage, such as summer sausage or kielbasa, casings removed
  • 1 tbsp tomato paste
  • 1-1/2 tsp paprika
  • 1 tbsp all-purpose flour
  • 4-6 cups chicken or vegetable stock or water
  • 2-15 oz cans pinto beansdrained
  • 1 bay leaf
  • Kosher salt & pepper
  • 2 Tbsp minced parsley (optional)
  • Juice of 1⁄2 lemon

Instructions:

1. Heat oil in a wide pot over medium heat. Add onions, carrots, peppers, garlic, and seasoning.

2. Cut the sausage into bite-size pieces and add it to the pot. Saute for 5 minutes until the vegetables soften. Stir in tomato paste, paprika, and flour, and cook for 3 minutes until the flour starts to brown.

3. Slowly pour in stock, stirring to prevent lumps. Stir in beans and bay leaf, and simmer 20-30 minutes, until flavors meld. Season with salt, pepper, parsley, and lemon juice to taste.

4. For serving: sliced crusty bread, strained yogurt or sour cream, juice of1⁄2 lemon, plus lemon wedges.
