 Paula Parra’s Cranberry Sauce

Ingredients:

• 1 1⁄2 c sugar

• 3⁄4 c water

• 3 whole cloves

• 3 whole allspice

• 2 3-inch cinnamon sticks

• 1 12-oz bag fresh cranberries

• 1 orange peel, grated

Instructions:

1. Bring sugar, water, cloves, allspice, and cinnamon sticks to a boil in a

4 qt saucepan. Cook, stirring until the syrup is clear, about 3 minutes. Add

cranberries and cook until they begin to pop, for about 5 minutes.

2. Remove from heat, add grated orange peel, and cool. Keep in the refrigerator

for 3 days before using. Remove cloves and allspice pieces before serving.

Makes 2 1⁄2 cups relish.
