Mixed Berry Clafoutis

Ingredients:

• 1 c fresh blueberries

• 1 c fresh blackberries

• 1 c fresh raspberries

• 1⁄4 c plus 1 tbsp unsalted butter,

melted and divided

• 3 eggs

• 1⁄2 c heavy cream

• 1 c whole milk

• 1⁄4 tsp sea salt

• 1⁄2 tbsp vanilla

• 1⁄4 tsp almond extract

• 3⁄4 c sugar

• 1 c flour

• 1-2 tbsp powdered sugar

• Whipped cream for garnish

Instructions:

1. Preheat oven to 350 degrees. Grease

a deep-dish 9” pie pan with 1 tbsp

butter. Spread berries over the bottom of the

dish, reserving a few to scatter on top.

2. In a medium bowl, whisk eggs,

cream, milk, salt, vanilla, and almond

extracts, 1⁄4 c melted butter, and sugar.

Sift flour, add to the mixture, then mix

well. Pour batter over the berries.

3. Bake for 35-40 minutes until the top

is brown, puffed, and firm. Top with

sifted powdered sugar, whipped cream

and reserved berries. Makes 8 servings.
