 Meatballs in Cabbage

Ingredients:

• 1 lb ground beef

• 1⁄2 carrot, peeled and grated, plus 1 tbsp diced bell pepper

• 3 carrots, cut up

• 1 egg

• 3 potatoes, cubed

• 1/8 cup rice or pearl  barley

• 1⁄2 onion, sliced

• 1⁄2 tsp salt

• 6 leaves of a medium cabbage, scalded

• 1⁄2 tsp pepper

• 1 can of tomato sauce

• 1⁄4 diced onion

Instructions:

1. Boil water. Place the cabbage in a large pot and pour boiling water over it to cover. Let it stand for 10 minutes. Drain and loosen leaves.

2. Mix the first 8 ingredients in a large bowl until rice and veggies are mixed.

3. Form into balls and wrap in the cabbage leaves. Lay a layer of cabbage rolls, then carrots and onion. Top with potatoes. Pour tomato sauce over the mixture and season with salt.

4. Add 2 cups of boiling water and cook on low/simmer for 2 hours. 

Optional: garnish with fresh parsley.
