 Golden Potato Casserole

Ingredients:

• 6 medium potatoes

• 2 c sour cream

• 10 oz shredded sharp cheddar

• 1 bunch chopped green onions

• 3 tbsp milk

• 1 tsp salt

• 1/8 tsp pepper

• 2 tbsp melted butter

• 1/3 c breadcrumbs

Instructions:

1. Cook the potatoes in boiling salted water until tender. Remove them, cool them, and peel them. Grate the potatoes using a coarse grater.

2. Add sour cream, cheese, onions, milk, salt, and pepper.

3. Mix thoroughly and turn into a greased 9 x

13” pan. Smooth the top with a spatula. Combine melted butter and breadcrumbs. Sprinkle over the top.

4. Bake at 325 degrees for 50 minutes or until piping hot. Cut into squares or scoop with a large spoon. Serves 8-10. It tastes like re-baked potatoes.
