Cherry Swirl Cheesecake
Ingredients:
• 1⁄4 cup melted butter
• 1 cup graham cracker crumbs
• 3 8 oz pkgs. cream cheese, softened
• 3⁄4 cup granulated sugar
• 1 tsp vanilla extract
• 3 eggs
• 1 21 oz. can cherry pie filling
Instructions:
1. Preheat the oven to 350 degrees. In a medium bowl, stir together the melted butter and graham cracker crumbs. Press the mixture into the bottom and up the sides of a 9” pie pan. Bake for 10 minutes.
2. Beat cream cheese and sugar in a large bowl with an electric mixer at medium speed until smooth and fluffy, about 3 minutes. Add vanilla and eggs and beat just until smooth,about 1 minute.
3. Pour into the crust. Spoon 1⁄2 cup pie filling onto cheesecake. Use a knife to swirl filling into batter.
4. Bake 45-50 minutes, until set. Cool completely and refrigerate for at least 4 hours.
Slice and serve with additional pie filling and whipped topping.
