 Apple & Banana Oatmeal Cake

Ingredients:

• 1 cup quick-cooking rolled oats

• 1 tsp vanilla

• 1 cup boiling water

• 1 1⁄2 cups flour

• 1⁄2 cup/1 stick butter

• 1 1⁄4 tsp baking soda

• 1 cup granulated sugar

• 1⁄2 tsp salt

• 1 cup brown sugar

• 1⁄2 tsp nutmeg

• 2 eggs, beaten

• 1 tsp cinnamon

• 1 1⁄2 cups diced, peeled apples

• 1 banana, mashed

• 1⁄2 cup buttermilk, yogurt, or sour cream

Instructions:

1. Preheat oven to 350 degrees. Grease and flour a 9” x 13” pan.

2. Pour boiling water over oats in a bowl. Allow to sit for 20 minutes.

3. In a large mixing bowl, beat butter with granulated and brown sugar until light and fluffy. Add soaked oats, buttermilk, and mashed banana. Blend well. Add eggs and vanilla, beat to incorporate.

4. Sift flour, baking soda, salt, nutmeg, and cinnamon into another bowl. Add to batter and stir just until the dry ingredients are no longer visible. Stir in apples.

5. Spread batter into prepared pan. Bake for 35-40 minutes, until a toothpick comes out clean. Cool completely, then frost with Cinnamon Cream Cheese Frosting.


Cinnamon Cream Cheese Frosting

Ingredients:

• 4 oz cream cheese, room temp.

• 1 tbsp whole milk

• 6 tbsp/ 3⁄4 stick butter, room temp.

• 1 tsp vanilla

• 3 cups powdered sugar

• 1⁄2 tsp cinnamon

Instructions:

1. In a bowl, beat cream cheese with butter until smooth and creamy.

2. Add milk, vanilla, cinnamon, and powdered sugar. Beat until smooth

and spreadable. Frost the cake and sprinkle chopped nuts on top, if desired.
